Overview & Scope

We worked closely with a global leader in the travel retail industry to develop a comprehensive bid package (operational, commercial & technical) inclusive of adaptation of existing owned brands in addition to the creation of new innovative F&B concepts suitable to airport objectives - Bahrain & Dubai Airports - that addressed all aspects of the project. The operational plan included a detailed layout of the proposed outlets, staffing and training requirements, and supply chain logistics. The commercial strategy included revenue projections and a marketing plan to maximize sales and profit. The technical specifications covered all equipment, systems, and processes needed to deliver a high-quality food and beverage experience to travelers.

In addition to the operational, commercial, and technical aspects of the bid package, our team developed a range of new and innovative food and beverage concepts that were tailored to the unique objectives and traveler profiles of each airport. Our approach involved in-depth research and analysis of local and global food and beverage trends, as well as a deep understanding of the cultural and demographic factors that influence traveler behavior. We developed concepts that were designed to appeal to a broad range of tastes and preferences, while also meeting the specific requirements of the airport environment, such as portability, ease of service, and compliance with local regulations.

As a result, the client's bid was successful, and they were awarded the contract to operate food and beverage outlets at the two airports. Our bid package, including the new food and beverage concepts, received high praise from the Stakeholders. The new concepts have since been adapted and rolled out to other airports in the region, further enhancing the client's market leadership and reputation for innovation in the travel retail industry.
